Los Altos, Jalisco

Our tequila is born in the red clay soils of Los Altos, where higher elevations yield agave known for floral aromatics, bright fruit character, and natural sweetness.

While many producers trace their roots to the Lowlands, long associated with the category’s legacy expressions, this highland origin defines a style that is both delicate and structured – an unmistakable signature of Los Altos.

    Agave

    100% Blue Weber agave, grown in the highlands and harvested at peak maturity after 5–7 years – selected for its natural sweetness, aromatics, and clarity of flavor.

    Harvesting

    Skilled jimadores carefully trim each piña, removing excess waxy material while preserving structure and character – decisions that directly shape the final profile.

    Cooking

    Slow-roasted over 18–23 hours in low-pressure ovens, allowing the agave’s natural sugars to develop while maintaining precision and control.

    Fermenting

    Fermented over ~96 hours using a proprietary champagne yeast, enhancing brightness, lift, and a clean, expressive profile.

    Distilling

    Twice distilled to achieve balance and clarity, resulting in a spirit that is both delicate and structured.

Fosforo tequila is crafted under the guidance of master tequilera Miriam López, whose work with some of the region’s most respected distilleries has helped shape the modern fabric of Highlands tequila.

Trained as a chemist and part of a new generation of producers redefining the category, she brings a rare balance of technical precision and intuitive craftsmanship. Her approach honors tradition while embracing a more refined, expressive style.
